Fresh herbs are now available all year in big supermarkets, either growing in pots, or packed in small trays. Dried herbs are useful to keep in the store cupboard, but in many cases do not retain their flavour. Thyme, sage, rosemary, bay leaves and Oregano are good dried; basil, tarragon, mint, chives and parsley are not.

TO CLEAN

Fresh herbs need no more than gentle rinsing under a cold tap, then shaking dry.

TO STORE

Dried herbs should be kept in airtight jars, for up to 6 months. Chopped fresh herbs can be frozen in a little water in ice-cube trays, or stored in olive oil in a sealed jar.
